Wood-fired pizza can be especially welcome at a winter wedding: it is hot, freshly cooked and creates atmosphere. Keep the collection route short and sheltered, provide proper lighting, and confirm that the vehicle can use the venue safely in rain, frost or darkness.
Choose the position for winter, not summer
A lawn or distant courtyard may look perfect during a summer viewing but work poorly after dark in December. Ask the venue for a hardstanding setup position close to a suitable entrance.
The oven still needs a safe external working area. Do not plan to bring it into an enclosed space simply because the weather is cold.
Keep pizza hot on the journey
Fresh pizza loses heat if it travels a long distance through an exposed courtyard. Place the handover point near guests, minimise time between oven and serving, and use a continuous flow rather than building a large display in advance.
If the venue requires food to be carried inside, agree who handles that journey and how the handover remains organised.
Light every working route
Winter darkness can arrive before guests sit down. Check lighting at the vehicle entrance, setup, queue, steps and return path. Temporary lights and cables must be positioned safely and agreed with the venue.
Time the service around appetite

Have a weather decision process
Agree who can change the setup position, how late a decision can be made and which conditions would make a route unsafe. Frost, snow and high winds may matter as much as rain.
The venue should keep access routes treated and clear. The caterer remains responsible for deciding whether its equipment can operate safely.
Build a seasonal menu
Familiar pizza choices, fresh sides and a warm serving format suit colder months. If pizza is the main meal, make the package substantial enough for the season and guest expectations. If it is evening food, clear communication lets guests know hot food is coming.
